Baked Marrow and Potato Perfection

SERVES 4

1 marrow (squash)

225 g/8 oz/1/2 waxy potatoes, sliced 50 g/2 oz/ 1/2 cup butter

3 garlic cloves

150 ml/1/2pt/2/ cup double (heavy) cream Salt and white,pepper Grated nutmeg

Halve the marrow lengthways and cut in two again, making four portions. Scoop out the seeds with a spoon. Scrape the outer skin with a potato peeler. Part-cook for 3 minutes in boiling salted water. Remove, drain and pat dry. Place the marrow pieces in a buttered baking dish. Boil the potato slices for 4 minutes only, so that they retain their texture without breaking. Drain. In a small saucepan, heat the butter and fry (saute) the garlic for 30 seconds. Pour the garlic butter into the cavity of each marrow case. Arrange the par-boiled potato on each marrow, overlapping the slices. Coat the potatoes with cream. Season with salt, pepper and grated nutmeg. Bake in a preheated oven at 200°C/400HF/gas mark 6 for no more than 20 minutes until browned.
