Eggy Corn and Banana Waffles


3 eggs

I large banana, thickly sliced 50 g/2 oz/1 cup wholemeal breadcrumbs Oil, for shallow-frying 200 g/7 oz/1/2 small can sweetcorn (corn)

Salt and freshly ground black pepper

4 waffles, warmed Parsley sprigs

Beat one of the eggs on a plate. Use to coat the banana slices, then toss the slices in breadcrumbs. Heat enough oil to cover the base of a fry ing pan (skillet). Fry7 (saute) the banana slices until golden. Drain on kitchen paper. Wipe out the pan with kitchen paper and heat a further 15 ml/1 tbsp oil. Beat the remaining eggs with 15 ml/1 tbsp water. Stir in the can of com and season with salt and pepper. Pour into the hot oil and fry, lifting and stirring until golden brown underneath and just set. Flash under a hot grill (broiler) to brown the top. Cut into four wedges. Place a wedge of corn omelette on top of each waffle and bile a few slices of banana fritter on top. Garnish with parsley and serve.
